Battenburg Cake
You can use either homemade or bought almond paste, or marzipan for this famous chequerboard cake, says Mary.
I say: Before you preheat your oven make a little devide in the middle of your cake tin. This has no mention in the recipe.
What do we need:
100 gr softened butter
100 gr caster sugar
2 large eggs
50 gr ground rice. (I stopped using this after 3 tries, it made the sponge lumpy and unregonizable)
100 gr self-raising flour
1/2 level teaspoon baking powder
a few drops of almond extract
red food colouring ( I should have used more than 2 drops)
To finish:
about 3-4 tablespoons apricot jam
225 gr almond paste or marzipan
