Easy Apple and Blackberry Crumble
Shopping List:
For the crumble topping:
120 gr plain flour
60 gr caster sugar
60 gr butter, softened, diced
For the fruit filling:
300 gr cooking apples (not to sour) weight is cored and peeled
30 gr demerara sugar
30 gr butter
115 gr blackberries fresh or defrosted
1/4 teaspoon ground cinnamon
Ice cream to serve with it ( optional)
Preheat your oven to 190C. Put the flour and the sugar into a large bowl. Add the butter and then rub into the flour using your fingertips to make a breadcrumb texture.
Sprinkle this mixture evenly over a baking sheet and bake it in your oven for about 10-15 minutes or until lightly golden.
In the meantime we peel and core the apples into approx 2 cm dice. Put the butter and the sugar in a saucepan and melt together over a medium heat. Cook for about 3 minutes until a light caramel colour. Stir in the peeled apples and cook for 3 minutes more. Add the blackberries and then the cinnamon and cook for 3 minutes more. Turn off the heat and leave the apple mixture 2-3 minutes in the pan with a lid on top.
Spoon the warm fruit into an ovenproof dish and top with the crumble mixture and reheat in the oven for 5-10 minutes.
You can serve it with vanilla ice cream or cream or anything you like really.
