English Marmalade Muffins


Shopping List:

175 gr  Plain flour
25 gr porridge oats ( and a little for sprinkling just before baking)
175 gr soft light brown sugar
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda (baking soda)

the zest and 2 tablespoons of the juice of 1 Orange
1 tablespoon of sunflower oil
150 gr plain yogurt
1 large egg

9 teaspoons of chunky marmelade to be divided over the 9 muffins


* Preheat your oven to 200C. And line your muffin tin(s) with 9 paper cases.
Combine the flour, oats, sugar, baking powder and bicarbonate of soda in a large bowl.

* Whisk the orange zest, juice, oil, yoghurt and egg together then lightly mix the 2 mixtures until well combined.

* Spoon 1 tablespoon of the mixture into each muffin case, top with 1 teaspoon of marmalade, then cover with the remaining muffin mix and sprinkle a little oats over them. Bake them for about 15-20 minutes until your cake tester comes out clean and the muffins are golden. Leave to cool slightly.
